Mahi mahi, dorado, dolphin. No matter what you call it, mahi mahi is a great all-around fish for just about any cooking method you want to use with it. Poach it, steam it, fry it, bake it, grill it—it's all good. Here's a recipe for broiled mahi mahi that adds a zesty orange-juice glaze to this excellent tasting fish.
