Collard greens are a southern staple food that are beginning to be appreciated more and more by people outside the region. They make a great winter-time dish, and they're packed with nutrients. They do require a lot of cooking time, though, to make them tender enough to eat and also to get them to release all that nutrition. Here are some tips on preparing collards, a recipe for collard greens and ham hocks, and a bit of musing on the cultural role of collard greens in the South.
