Thanks for this delicious recipe! Absolutely elegant in its simplicity!!!! I pulled most of my leeks apart in order to wash out the dirt you mentioned (yes, it was plentiful and in several pockets of leaves). How would I be sure the dirt was out if I was trying to leave the leeks halved, to serve attractively to company, as the recipe suggests?
