- Quick and Easy Part 15 - Quick Baked Potato Soup
[Food-and-Drink:Soups] This delicious potato soup is simple, thrifty and can be prepared in less than 10 minutes. Microwave cooking is handy for reheating leftovers, but in this case can speed up the soup making process. I used a teaspoon of butter in this recipe but you could probably use olive oil. instead if you are interested in keeping away from saturated fat, which can raise your blood cholesterol.
- Quick and Easy Part 18 Quick Chicken Piccata
[Food-and-Drink:Recipes] The traditional Italian Piccata recipe calls for veal. This one is a variation of that classic using chicken breast meat in place of veal. Capers are used in most versions but I have omitted them here, not so much for economics but rather for simplicity. If you prefer, go ahead and use.
- Quick and Easy Part 14 - Chicken & Noodles With Mint Sweet and Sour Sauce
[Food-and-Drink:Recipes] This is another quick and easy chicken dish. The mint sweet and sour sauce was made separately, but it could probably be made using the sweet and sour ingredients to deglaze the pan used to saute' the chicken. As with almost any recipe you are trying to do it as quickly and efficiently as you can, you start the pasta (in this case noodles) cooking while you are working on the rest of the dish.
- Friendship Day - It's Not Just About August 1 - Celebrate it Every Day
[Relationships:Friendship] National Friendship Day is celebrated on August 1 every year. Although I had never heard of it I think there's a need for such a holiday. It doesn't need to be another of these "I like it because I get off work" holidays. Rather it should be a day to spend some time remembering some of the friends from the past. All the way from grade school to high school to workplace, we have all had friends.
- Pro Baketball in Pittsburgh?
[Recreation-and-Sports:Basketball] I am trying to think of reasons Pittsburgh does NOT have a pro basketball team. Could it be that it's so hilly that most yards are on a slope and aren't amenable to kid basketball. In Indiana it's called the Hoosier Hysteria. At one time you could drive through almost any little town and every other yard would have a hoop fastened to the garage or barn. You don't see that around here. A pro basketball team could bring in big bucks if it was done right. I started wondering if there ever was a pro or even"semi-pro team in this area and did a little research.
- Quick and Easy Part 17 - Two Quick Banana Breakfast Dishes
[Food-and-Drink:Recipes] Breakfast is many times a hurried affair and sometimes spending even a half an hour cooking is not an option. These two banana based recipes are not only quick and easy to prepare, but very tasty as well. Bananas are a good source of vitamin C and so can be part of a a healthy diet
- Quick and Easy Part 16 - Garden Salad
[Food-and-Drink:Salads] This delicious salad should be made from vegetables form your own garden, or a farmer's market if you don't have your own garden. Nutritionally it's hard to beat fresh from the garden vegetables, and by eating them in their raw natural state, you are more likely to keep the vitamins, enzymes and other natural substances contained in them. Wash the vegetables before you use them, especially if they are from the supermarket, or if you have used any pesticide sprays in your own garden.
- Quick and Easy Part 13 - Tuna Lettuce Appetizer Salad
[Food-and-Drink:Salads] This quick salad with plenty of protein (tuna and eggs) can be prepared quickly from ingredients you probably already have in your pantry or fridge. Try this one at lunch time when you can't take the time, or want an alternative to putting together a sandwich. It is not only delicious but makes a eye pleasing presentation for you and your guests.
- Quick and Easy Part 12 - Kiwi-Banana Pie
[Food-and-Drink:Recipes] This recipe was made on the fly to use up some kiwi fruit before it expired. A future pie with similar recipe will be made with lime so I can call it a Kiwi-Lime Pie (Not Key Lime Pie). The name would be an attention getter because of the similarity.

- The Fastest Omelet in the West - The In-Situ Omelet
[Food-and-Drink:Recipes] After watching a TV chef make a quick omelet by using a wire whisk to stir while cooking, I decided to make one like it only even more quickly. - Quick and Easy Chicken and Sausage Crock Pot
[Food-and-Drink:Crockpot-Recipes] This modification of a classic Philippines dish is quick and easy as are most crock pot recipes. - Quick and Easy Part 11 - Delicious Chicken Drumstick Crock Pot Stew
[Food-and-Drink:Crockpot-Recipes] The Crock Pot dish is not only a wonderful time saver but some slow cooked dishes are very tasty when compared with the same dish made other ways. This recipe makes a delicious chicken stew using only the drumsticks. You could use chicken thighs or leg quarters, or even the whole chicken if desired.
- Quick and Easy, Part 8 - Chicken Breast With Sauteed Bamboo Shoots
[Food-and-Drink:Recipes] In these fast moving times many people are tempted save meal preparation time by either buying frozen dinners, or packaged "fast food" at the supermarket or going to a take out place to get their food in a hurry. While this may seem OK most people ignore the possibilities of the extra additives in these pre-packaged and take out dinners.
- Quick and Easy, Part 4 - Fresh Asparagus and Mushroom Saute
[Food-and-Drink:Recipes] This saute dish takes a little over 10 minutes cooking time and the ease of preparation would make it a good luncheon dish. This dish was cooked in my own kitchen and served as a side dish. If you would like to make this a main dish (it is vegetarian by the way), you could add about 1 tbsp of cornstarch to 1/2 cup of water or chicken stock to act as a thickener, then serve over cooked spaghetti, or elbow macaroni. Start the pasta first and prepare the saute while it is cooking.
- Quick and Easy Part 7 - Penne Rigate and Vienna Sausage Meatballs With Pasta Sauce
[Food-and-Drink:Recipes] Using some of the same techniques used by professional chefs, you too, can learn to cook foods that can be prepared quickly and easily, so that you can avoid the highly processed "pre-made" dinners from the supermarket. The simple recipe shows you how to do it.
- Quick and Easy - Part 6 - Asparagus Soup
[Food-and-Drink:Soups] When preparing fresh asparagus for using in a recipe, mot cookbooks and also many TV chefs tell you to snap off the bottom part of the stalk because it's usually tough and contains hard fibers. Most of these people also discard the leftover pieces. As a great believer in the Benjamin Franklin's quote that I think comes from his Poor Richard's Almanac which is "Waste not, want not", I am hard put to discard anything that can be used.
- Quick and Easy Part 5 - Chicken Breast With Sausage Crumb Crust
[Food-and-Drink:Recipes] Kielbasa or Italian sausage will add a wonderful blend of spicy goodness to this baked chicken breast recipe. All the flavors from the sausage blend with the flavor of the chicken. Since the sausage is already seasoned you don't really need much more seasoning but cayenne pepper gives this dish a little heat boost. You could use boiled ham in place of the sausage, but since ham is usually not seasoned as much as sausage, you might need to add a little extra sage and salt and pepper.

[Food-and-Drink:Recipes] This stir fry dish takes less than the cooking time for the noodles it is served over, and the ease of preparation would make it a good luncheon dish. Start the noodles first and prepare the stir fry while the noodles are cooking. Most of the flavor comes from the chicken, and soy and sesame oil. The crunchy water chestnuts add a great contrast in texture to the soft chicken breast bites.

- Delicious Crockpot Chicken and Ham Chili
[Food-and-Drink:Crockpot-Recipes] This very simple chili is made with chicken and ham but ground beef could be substituted for the chicken and or ham if desired. The recipe was based on a number of (edible) experiments in an attempt to match a particular commercial chili originating in Texas. This brand is so popular that I am told that some people who have moved out of the area ordered cases of cans of it shipped to their new residences. I believe the "magic" ingredient that makes this dish stand out is the use of refried beans in place of pinto beans.
