This makes a nice marinade without you having to worry about mixing your own spices. Another option is to buy commercially prepared steak marinades. Just remember that with this cut of steak, a dry rub is not enough!
You will want to place the steak in a large zip lock bag and pour the marinade over it. Make sure you allow at least four hours. As stated before, marinating overnight is ideal.
Another thing you need to remember when making recipes with this cut of meat is that you don't want to overcook. My dad hates flank steaks and it's his own fault. He will not eat a steak unless it is well done and to be honest, well done flank steak has the texture of rubber. It really should not be cooked past medium rare for the best possible taste and texture. If you like your steak rare you are in even better shape.
When cooking steak, always remember that you will want to let the steak rest for up to five minute after you remove it from the grill, broiler or pan. During this time it will continue to cook and will typically increase in temperature by another 5 degrees.
