What is best for making edible figures?

When making cakes - there are 4 main ways of making edible figures. They are:

  • Icing or Fondant figures
  • Marshmallow Fondant
  • Chocolate Clay or Modelling Chocolate
  • Gum Paste

Icing or Fondant

This is the most popular choice - you can buy a wide range of colors readymade fondant, simply open the pack, and make your figures. After awhile it will dry, and the figures will last a very long time, and be ok in temperatures up to 80. You can also make your own - adding colorings that suite you. The negative of this is - not many people like the taste of icing/fondant, so your fancy cake and decorations may be peeled off and left, only eating the cake underneath.

Marshmallow fondant.

This is a softer version of the above - the marshmallow base improves the taste, but also make making figures slightly harder as it is very soft. This has to be created at home, and gel based colors need to be added to get the colors needed.

Chocolate Clay or Modelling Chocolate.

Made at home using chocolate and corn syrup - this is the new popular choice by cake makers as it tastes the best, is easy to work with and seams are easy to blend. The problem with the melting tendency of the chocolate.

Gum Paste.

Gum Paste, once set turns very solid. This is best for very hot states/countries, and is usually used to make flowers on wedding cakes. The set paste is crunchy hard, but is not that great to eat.
