Expert Author Cecilia Benjumea

Many people are using a spiralizer to avoid wheat pasta and making their pasta out of vegetables. It's really easy with a tool called a spiralizer and I'm going to show you how.

In the news these days you hear about the the importance of eating fruits and vegetables and avoiding refined foods such as white flour and white sugar. But what happens if you love to eat pasta? Pasta can be really hard for some people to give up, but luckily you don't have to!

There is this amazing tool called the spiralizer that is affordable and really easy to use. It makes special spiral cuts out of long cylindrical shaped vegetables. It works really well with zucchini but can be used with a variety of vegetables such as daikon radish, beet, carrot, English cucumber, and sweet potato. You can even use it with potato to make a fried bird's nest, but that is another article!

To make zucchini pasta with the spiralizer:

1. First, peel the zucchini and cut it in half (Use 1-2 zucchini for 1 serving depending on the size of the zucchinis).

2. Use the spiralizer according to the instructions.

3. Gently saute the zucchini pasta in a little olive or coconut oil. For more flavor you can add a clove of minced garlic into the saute pan before adding the pasta.

4. Season the pasta with a pinch of salt and pepper.

5. Top with your favorite warmed red or white pasta sauce.

6. Sprinkle with Parmesan or a vegan Parmesan made with nuts and nutritional yeast.

Enjoy with some garlic bread and perhaps a glass of wine, and you just made a healthy pasta dish without using refined flour!
