Two Great Tasting Chicken on a Bed of Stuffing Recipes

There's nothing quite like a herb - breadcrumb stuffed chicken roasted in the oven.

It brings back memories of Sunday dinners with sides of mashed potatoes and gravy and corn on the cob. What if you could get the same great taste without taking the time to do a whole chicken. You can with the two recipes presented here. One is a very quick microwave version and the other is a conventional oven version that takes only a few minutes more. These recipes are for two but could be doubled quite easily.

Quick and Easy Chicken on Herb Stuffing (Microwave Version)

Ingredients

1 skinless boneless chicken breast half
1 onion, thinly sliced
1 stalk celery sliced thin
1 tablespoon olive oil
1 tablespoon chopped banana pepper
1 cup breadcrumbs
1/8 teaspoon each of basil, oregano, thyme, and garlic powder

Instructions:
1 - Combine all ingredients except chicken and stir
2 - Place on microwave safe dish and cook for 9 minutes on high
3 - Place chicken breast on top, cover and cook another 9 minutes
4 - Turn chicken over halfway through cook time

Comment - Depending upon your microwave you may need to adjust cook times.

Chicken on a Bed of Sage Breadcrumb Stuffing

Ingredients

1 small onion, chopped
2 cups bread crumbs
4 tablespoons olive oil
1/2 teaspoon dried sage
1/2 cup milk
2 chicken breast tenders (about 3 ounces total)

Instructions

1 - Sauté onion in 2 tablespoons of olive oil.
2 - Add the other 2 tablespoons of olive oil and the sage to the bread crumbs.
3 - Add the breadcrumb mixture to the onions, add milk and stir with heat until uniform.
4 - Place the mixture in a greased casserole and spread evenly in the bottom.
5 - Lay the chicken tenders on top and bake for 20 minutes in a preheated 350 degree oven.
