To Prepare Home Make Salted Vegetable, Papaya and Lime Jam and Pickling

Home Make Salted Vegetable

Ingredients:
1.2 kg mustard greens
300 g salt
thick rice water (1st lot of water used for washing rice)

Method:
1. Wash the greens and then dry them in the hot sun for 1 day. It is best to hang the plants up to dry quickly.
2. Rub salt into the withered vegetables.
3. Pack the vegetables into an earthenware jar and pour in enough rice water to cover the vegetables.
4. If desired, add in a teaspoonful of saffron powder to give the vegetable the usual yellowish color.
5. Cover the jar with a piece of muslin tied tightly over it and cover the whole opening with an inverted enamel plate.
6. The vegetable will be ready in about 5 days.

Home Make Papaya and Lime Jam

Ingredients:
1 ripe papaya
4 limes and sugar

Method:
1. Skin papaya, remove seeds and cut up the fruit into small pieces.
2. Squeeze the lime juice and add it to the papaya.
3. Put the lime rind into a bowl and pour boiling water over it. Leave it till the water is cool. Squeeze the lime rind dry, then shred very finely and it to the papaya.
4. Measure the fruit into a saucepan and add 1 cupful of sugar to every cupful of fruit.
5. Mix the fruit and sugar together, let it stand for at least 1 hour and then boil the jam very slowly until it sets.
6. Fill jam into warmed jars and cover them immediately.
Note: Other jams can be made in this way using all kinds of local fruit.

To Prepare Fruit for Pickling Any of the following fruit can be used.

1. Mango. Wash 8 mangoes, cut each in half and remove the seed. Cut each half into 3 or 4 pieces and put them in an earthen jar. Sprinkle 2 to 3 tablespoons, salt over the fruit and shake the jar so that the fruit is well mixed with salt. Cover the jar with a piece of muslin tied on securely and put it in the sun every day for 7 to 10 days. Shake the jar every day for mix the fruit. When ready for pickling, the fruit need not be very dry, it can have a little brine and fruit juice mixed with the fruit.

2. Star Fruit. Add salt to the washed and dried star fruit and keep it covered in an earthen jar for 5 days, putting it out in the sun every day. After 5 days, take out the star fruit and spread them on a bamboo tray to dry thoroughly.

3. Limes. Cut each fruit in half and remove the seeds. Salt and dry them as for mangoes.

Note: Pickle made from these fruits keep very well and is very appetizing when eaten with curry. Pickle must be followed to mature for at least 2 weeks before it is eaten. The flavor develops during this time.
