They are very important and offer several benefits aside from pretty much allowing you to go by the defense whenever you choose to.

The Crossover
To be effective with the crossover, you have to understand what changing direction is all about. If you think of the crossover is just a move to get the ball from one hand to the other think again.
The crossover is much more than that. If used properly it is a weapon that can be used over and over again to punish the defense.
In my opinion if someone asked me what one move I think all players should master I would say the crossover. Besides just being an excellent move for changing direction, I like it for two reasons. First, I like it because if used properly you can use it to get a step on the defense. Second, If setup properly, the defense will have a hard time recovering. It's much easier to recover from the between the legs dribble or the spin move.
The In-And-Out or Fake Crossover
The nice thing about the in-and-out is that it is the perfect move to setup or fake the crossover. Plus it keeps the defense guessing. If you do this right and you have a head of steam you can virtually blow by the defense as if they weren't even there.
To properly sell this move, you'll need to use your head, shoulders and whole body to really sell it as if you're going to crossover. Then you'll quickly change direction and blow by the defense. This is a tough move to guard because the ball remains in your hands so much.
Be careful not to carry the ball with this move. The referee will call a traveling call on you. Do this move right and you'll be blowing by the defense at will.
The Stop-and-Go or Hesitation Dribble
This is another one of those moves that freezes the defense. And if you add it to your arsenal and master it, you'll be able to control the defense like a puppet. You'll be able to freeze the defense for a split second then blow by them. Or you'll be able to freeze the defense for a quick pull-up jump shot. The possibilities off this move are endless. You can even combine it with a change of direction move.
This move is really great in the back court when bringing the ball up versus pressure. As soon as you can get a step on the defense once you catch them sleeping after a hesitation you can explode by them.
To really sell the hesitation dribble, you want to slightly raise yourself up as if you have stopped and then explode by the defense. You can even lean back a little bit to really sell it some more and make the defense relax. This is a great move and tough to guard when done right.
