The recipe requires zucchini, sunburst squash, or any other type of young summer squash. If you are eating the zucchini pasta as a main dish the ratio is about 2-3 medium zucchinis per person. If the dish is a side dish the ratio is about 1 medium zucchini per person.
The recipe requires a blender. You can make the sauce in a food processor with the s blade, although it will turn out chunky instead of creamy.
When making a quick dinner for myself I may not have the time to add the garnishes on top. It is up to you how simple or complicated you would like to make the recipe. Feel free to add more garnishes. Parsley, basil, other Italian herbs, olives, sun dried tomatoes, cherry or chopped tomatoes, chopped avocado, and diced bell pepper all make great additions to add on top of this Italian inspired recipe. If you want to get really fancy you can grind some pine nuts to substitute for Parmesan cheese.
This raw marinara sauce using classic recipes always turns out great every time I make it. You don't even have to tell your family or guests that it's raw. It's that good!
Zucchini Angel Hair Pasta with Marinara Sauce
8 medium small tomatoes (or 4 large tomatoes)
1 red bell pepper
1-2 cloves garlic
2 sprigs basil (about 10 leaves)
2 sprigs oregano (about one teaspoon fresh leaves)
1/4 of a chili pepper (seeds removed or 1/8 teaspoon cayenne or chili flakes)
1/2 cup sun dried tomatoes
Optional: 1 cup chopped bell pepper and 1 cup chopped tomato
6 medium zucchini spiralized on thin setting
Garnish:
1/2 cup chopped parsley
1/2 cup ground pine nuts
Blend all ingredients except the 2 cups chopped bell pepper and tomato in a blender until smooth. You can add more sun dried tomatoes for a thicker sauce. Mix chopped bell pepper and tomato into the sauce for a chunky style sauce. Pour sauce over spiralized zucchini. Garnish with parsley and ground pine nuts (grind in a blender or coffee grinder) if desired.
*Make sure to adjust the seasonings to your taste buds!
