Spiralizer - Two Easy Recipes to Get Your Family to Eat Vegetables!

The spiralizer, also known as the spiral slicer, is a cool tool that you can use to make angel hair type noodles out of hard root vegetables. Typically the spiralizer is used with zucchini to make an alternative to wheat pasta, but it also works great with carrots and beets. Kids love the bright colors and the silly texture of spiralized beets and carrots. You can simply just put spiralized carrots and beets in a salad or try these two interesting recipes below. Spiralized Carrots and Zucchini with Mac Nut Cheeze Sauce

1 cup macadamia nuts (or pine nuts)
2 orange or yellow bell peppers chopped
2 tablespoons tahini
1 teaspoon South River Chickpea Miso or other brand organic chickpea miso
2 medium spiralized zucchini on thin setting
2 spiralized carrots
Garnish:
1 bell pepper diced
1/4 cup chopped parsley

Add 2 chopped bell peppers to a blender and then add Mac nuts, 2 tablespoons tahini, and 1 teaspoon miso. Blend until smooth. Pour over spiralized zucchini and carrots. Garnish with diced bell pepper and parsley.

Spiralized Beets with Crème Sauce

1 cup young coconut water
1 cup pine nuts or macadamia nuts
2 beets spiralized on thin setting (regular or golden)
Garnish:
1 sprig basil (about 10 large leaves) chopped
10 cherry tomatoes diced

Blend coconut water and pine nuts or mac nuts in a blender until smooth. Pour over spiralized beets and garnish with chopped basil and tomatoes.
