Quick and Easy, Part 8 - Chicken Breast With Sauteed Bamboo Shoots

In these fast moving times many people are tempted save meal preparation time by either buying frozen dinners, or packaged "fast food" at the supermarket or going to a take out place to get their food in a hurry. While this may seem OK most people ignore the possibilities of the extra additives in these pre-packaged and take out dinners.

The manufacturers add shelf life and appearance enhancers as well as fats that may taste good but are nutritionally poor. Although you are using canned bamboo shoots, which could be considered "processed food", the product is usually packed in water and because it is canned, additives for shelf life are not needed. This recipe is another in the series of "quick and easy" dishes designed for busy people who want more nutritious meals that can be prepared quickly. Because of the use of the skinless chicken tenders and olive oil in place of butter, this recipe is lower in the "bad" fats.

Ingredients

2 chicken tenders (about 3 oz), cut on the bias into thin strips
1 cp sliced bamboo shoots, drained
1 tbsp olive oil
1 tbsp chopped onion
1 tbsp soy sauce
2 tsp soy sauce
1/2 cp chicken stock or water
1/2 tsp ginger

Instructions

1 - On high heat sauté chopped onion 1 minute.
2 - Add chicken strips and sauté 1 minute.
3 - Add the other ingredients and stir until thickened
4 - Simmer until chicken is cooked through.
5 - Serve over cooked pasta or rice

Note - to shorten total preparation time, start the pasta in boiling water while sautéing
