Old Fashion Recipes to Grace Your Table - Sweet Potato Souffle Or Easy Pumpkin Ice Cream

If you love good comfort meals, you will love these old fashion recipes to feed your family and friends. Miz Hendrick's Sweet Potato Souffle is quick, easy and a reminder of holiday meals at grandma's house. This Pumpkin Ice Cream recipe is so easy it is unbelievable. You can make your own homemade ice cream without even owning a special freezer. These are great recipes for the holidays.

MIZ HEDRICK'S SWEET POTATO SOUFFLE

3 cups cooked, mashed sweet potatoes
1 cup sugar
2 eggs
1 tbsp vanilla
1/2 cup butter, softened

Topping:
1 cup packed brown sugar
1/3 cup flour
1 cup chopped pecans

Preheat oven to 350 degrees.

Mix together the sweet potatoes, sugar, eggs, vanilla, and butter. Pour mixture into a lightly greased casserole dish.

Mix the brown sugar, flour, and pecans together with a fork. Sprinkle the mixture over the top of the sweet potato mixture. Bake at 350 degrees for 30 minutes.

PUMPKIN ICE CREAM
This quick and easy pumpkin frozen treat recipe was published many years ago in the local newspaper of my hometown when I was a kid. (Many, many years ago!) It was from a local home extension service's home economist.

1 cup pumpkin pulp
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp salt
1/4 tsp nutmeg
1 quart vanilla ice cream

Mix pumpkin, brown sugar, cinnamon, ginger, salt, and nutmeg together. Soften ice cream and blend with the pumpkin mixture. Freeze until firm and you have your own homemade pumpkin ice cream.

Note: You can add chopped nuts or pralines to this recipe for crunch and extra richness, if desired!
