Mediterranean Spinach Stuffed Sole

If you want to eat a healthy fish dish that has been cooked with minimal oil and low fat mozzarella cheese, then you will want to sink your teeth in this dish.

Ingredients
- 1 1/2 lbs sole fillet or any white fish of your choice
- 4 oz grated part skinned mozzarella cheese
- 1/2 lb sliced fresh mushroom
- 1/2 lb chopped fresh spinach
- 1 teaspoon olive oil
- 2 teaspoons sherry
- 1/4 teaspoon crushed oregano leaves
- 1 garlic clove minced

Method to make tasty yet healthy spinach stuffed sole. Preheat empty oven to 400 degrees Fahrenheit. Spray a 10 x 6 inch baking pan adequately with non stick cooking spray. Heat olive oil in a medium sized skillet and sauté mushrooms for 3 or 4 minutes. Add the chopped spinach and cook for another minute on medium heat. Remove the spinach mixture from heat and drain liquid into the prepared baking dish. Add oregano along with garlic to the drained vegetable and stir well.

Divide the spinach mixture evenly amongst the fillets and stuff the spinach filling in the center of the fish pieces. Roll the stuffed fish pieces and place the pieced seam side down in the prepared dish. Sprinkle the fish pieced with sherry and sprinkle adequate amounts of mozzarella cheese on them. Bake the spinach filled fillets for 20 minutes. Lift with a slotted spoon and serve hot. Who said healthy had to taste bad/this recipe is not only healthy it is delicious and filling. It is also a great dish for dinner parties.
