Making Garlic Chicken on the Grill

Cooking meat on a grill out on the back porch with all of your friends and family around is pure joy. If the weather is nice and you've got some music playing, it's pure heaven. But if you want to keep things joyous, you have to make sure that the food isn't just good but great. Meat cooked on a grill is still just meat without a mouthwatering marinade to make it special.

  • Four split chicken breasts
  • Four cloves of crushed garlic
  • Juice from half of a lime
  • Half a cup of olive oil
  • Salt and pepper
Mix up everything (except the chicken itself). Save about a quarter of a cup of the marinade and put it aside. Rub the rest over the chicken breasts and let them set for about three hours. When you put the chicken on the grill, add the rest of the marinade.

As a variation, you can use lemon juice instead of lime juice. It's also good with just a little bit of onion added.

This marinade is not only good on chicken. It works just a well with beef and even seafood.

If you have enough people to eat it all, you might try making a double batch of the marinade and fixing both chicken and steaks. You might also try combining steaks and shrimp.

Fix some corn on the cob or foil wrapped potatoes or your favorite vegetables to go with it, open up a few beers and you've go yourself a party.
