Hipolito's Salsa

If you are a person who loves fresh salsa then you will love this recipe. Hipolito's Salsa is perfect for parties or just to have around the house. It goes great with fish, chicken, ground beef tacos, chips and salsa and so many other dishes. Whenever we bring this dish to a potluck, people go crazy for it. It is always one of the few dishes where there isn't any left over. Being that you are the one making the salsa you know exactly what is going into the salsa making it very healthy. Give yourself 15 minutes and you can have the best, fresh salsa around.

Hipolito's Salsa

10-12 Jalapeno peppers
6 Large fresh tomatoes
2 Bunches of cilantro
2 Bunches of green onions
1/2 Head of fresh garlic
2 Tbls Champagne vinegar
1 large can of whole peeled tomatoes
Salt to taste

Directions:

In a food processor chop jalapeno peppers to a fine consistency. Do not puree. Set aside in a bowl. Cut fresh tomatoes into chunks and puree in food processor. Place in a separate bowl. Chop cilantro and green onions the same way as the jalapenos in food processor and slowly add juice from the can of whole tomatoes as needed to assist in chopping. Add this mixture to bowl with fresh tomatos. Puree canned whole tomatoes, garlic, champagne vinegar and salt. Add to tomato bowl and mix all ingredients with spoon. Let sit for 30 minutes to allow best flavor. Begin adding the jalapenos tasting occasionally for desired heat.

To satisfy all palates try separating the tomato mixture into two bowls. Adjust spice heat by adding more/less jalapenos peppers/tomatoes. This is to make sure everyone can enjoy a firey salsa down to medium heat.
