If we have done our research about heart diseases faithfully, then we should know by now that high cholesterol alone does not cause the symptoms for heart problems. Heart disease is caused by a lot of different factors, and it's crucial for us to determine the different underlying causes to effectively prevent and cure it.
.It's important to look into the advent of polyunsaturated vegetable fats (like margarine) and oils. Deaths caused by heart attack have increased in direct ratio to the consumption of polyunsaturated fats as oils and margarines. When you heat unsaturated and natural vegetable oils these oils undergo a transformation from the chemical cis form to the more stable but abnormal trans form. The trans form, not normally found in these oils if cold pressed or unheated, is more reactive with oxidants, producing rancidity by products that cause an increase in the circulation of possible mutagenic substances which may start damaging the arterial walls. This may be a significant factor in the production of atherosclerotic plaque buildup - a cause of coronary heart disease.
.Margarine may also be a factor. Originally many people substitute butter to margarine to reduce their total dietary cholesterol intake, thinking they were making a healthy alternative. This seemed logical in light of the cholesterol-heart attack hypothesis, however, it turns out that the use of partly hydrogenated oil not only does not decrease blood cholesterol levels, it actually increases them. Hydrogenated oils have high trans forms of fatty acids, and this form inhibits a liver enzyme responsible for converting cholesterol into bile acids. Bile acids transport cholesterol out of the body. If cholesterol is not converted to bile, it accumulates in the blood, the exact opposite of the desired result.
.Recent research warns against low levels of serum cholesterol. Indiscriminate lowering of cholesterol actually increases the risk of cancer, as bad cholesterol transports the fat soluble antioxidant vitamins E, A, and carotene. Low cholesterol levels also affect the capacity of the endocrine system to manufacture the hormones, and will create imbalances which affect libido, menstrual cycle among other things.
.There is no doubt whatsoever that low levels of serum cholesterol don't prevent heart attacks. But worse, low cholesterol levels may be associated with the causes of cancer. Cholesterol may be, in fact, part of our defense system against cancer. Saturated fats, although a central factor in heart disease, does not work in isolation of the diet. Understanding how cholesterol works in the body may help us appreciate it more, and more importantly, help us in effectively preventing and curing heart problems.
