To make the salad you will need 1 small bok choy, 3 leaves from a napa cabbage, ½ bunch of water cress, ½ cup of cilantro, ¼ cup mint, ¼ cup basil, 1 cup jicama and 2 green onions. Cut all into bite size pieces and mix together.

Next combine the juice from ½ large lime, 2 crushed garlic cloves, 2 tablespoons liquid aminos, ½ tablespoon agave syrup and a dash of minced jalapeno pepper. Let this stand for a few minutes and then pour over the salad.

Then add some Mung bean spouts. Enjoy your fresh salad and welcome to the first course of your new lifestyle.

<b>Main Course</b>

For the main course try some pasta with eggplant sauce. To make this dish you will need 3 ½ ounces of spelt pasta. You can find it at a health food store. You will also need ½ of an eggplant, ½ red bell pepper, and ½ a yellow onion, 2 or 3 pieces of basil and ½ small chili. First put the pasta on to cook according to the package directions. Cut all the ingredients into small pieces. Take a skillet and using very little olive oil stir fry all the ingredients. Add ½ cup yeast-free vegetable stock dissolved in ½ cup of water. Cook for another 10 minutes. Pour the sauce over the noodles and season to taste with sea salt, cayenne pepper and garlic.

No meal would be complete without dessert. For dessert try some stuffed figs. Simply take the pitted figs and fill them with a small amount of almond butter. Then roll them in coconut and put a pecan on top. They are like a little cookie.
