Easy Slow Cooker Meatloaf

This is a quick and easy recipe for cooking a yummy meatloaf in a slow cooker. If you don't have ground pork sausage on hand, you can substitute more ground beef or use ground turkey in place of the pork sausage. The meatloaf has good flavor and holds its shape well. It doesn't fall apart easily either, making it easy to remove from the cooker to a serving platter.

If your slow cooker is rather shallow, you can use it as a mixing bowl to combine the ingredients together, and then you can cook the meatloaf in it as well. This makes cleanup a snap as you haven't dirtied any additional dishes or mixing bowls.

Easy Slow Cooker Meatloaf

1 1/2 to 2 pounds ground beef
1 pound ground pork sausage
2 eggs
1 sleeve saltine crackers
1 small onion, chopped fine
1 teaspoon seasoned salt
1 teaspoon ground black pepper
1 cup salsa
1 cup ketchup, divided

Combine the ground beef, pork, eggs, saltine crackers, onion, seasoned salt, pepper, salsa and 1/2 of the ketchup in a large mixing bowl. Mix together until well combined. This is most easily accomplished by using your hands.

Once the ingredients are well mixed, shape the mixture into a loaf in the shape of your slow cooker. Place the loaf into the cooker and cover with the lid.

Cook on LOW setting for 4 to 6 hours. When the meatloaf appears done, drain the drippings from the cooker. Spread the remaining 1/2 cup of ketchup evenly over the top of the meatloaf. Replace the lid and continue cooking on low for another 30 minutes before serving.

To remove the meatloaf, using a large spatula to aid you works best. Tip the cooker at an angle toward one side. Slip the spatula under the meatloaf and slide it out of the cooker onto a waiting plate or platter.
