Easy Red Quinoa Recipes

Quinoa is a great addition to your diet if you want something healthy, nutritious and undeniably tasty. One of my favorite red quinoa recipes is the red quinoa and broccoli salad. For this recipe you will need:

2 cups of cooked red quinoa
1 small head of broccoli cut into very small florets
2-3 green onions (chopped)
6 oz of extra firm tofu (cubed)
1 clove of garlic (minced)
2 tablespoons of cooking oil
1/4 cup sliced almonds or walnuts
Salt and pepper to taste

Heat the oil in a medium skillet and sauté the garlic. Add the tofu and sprinkle salt and pepper. Stir fry for about 3 minutes or until you see the tofu brown just a bit. Add the chopped broccoli and keep cooking until it becomes tender. Turn off the heat and in a separate bowl, combine the red quinoa, tofu and broccoli and mix them together. Add the almonds or walnuts and enjoy.

Another recipe that I like that's very easy to make is the quinoa salad. The ingredients are:

1 cup red quinoa
2 cups water
6 radishes (diced)
1 red onion (diced)
1 large tomato (chopped)
¾ cup crumbled goat cheese
2 tablespoons capers (coarsely chopped)
2 tablespoons fresh oregano (chopped)

For the dressing you will need:

1 tablespoon Dijon mustard
4 tablespoon red wine vinegar
1/3 cup olive oil
Salt and pepper to taste

Bring the water to a boil and put the quinoa, cook for 15 minutes or until the water is fully absorbed. Let the quinoa cool and toss the salad ingredients with it except for the goat cheese. For the dressing, whisk the mustard and vinegar until smooth, drizzle in olive oil and whisk it continuously until the mixture starts to blend. Add salt and pepper according to your taste. Pour dressing over salad and toss. Top it with cheese.
