Some people just need their baked goods for a breakfast treat. No matter how hard they have tried, they just do not feel comfortable with anything else for the first meal of the day.
But the standard enormous grocery store muffins can be anywhere from 3-6 carb choices larger than what you are allowed for your whole day's diet.
Try a few of these substitutions in your current favorite recipes for a scaled down version of calories, fats, and the total carbohydrate load.
- replace half of the all-purpose white flour with and equal amount of whole wheat flour
- reduce the current sweetener by 25% (if the recipe calls for 1 cup then use 3/4 cup instead)
- change any butter, margarine or vegetable oil in the recipe to an equal amount of unsweetened applesauce, canola oil or ripe mashed banana
- add 1/4 cup ground flaxseed for an important nutritional boost
Popular Sugar Free Banana Muffin
Yields 18 regular size muffins
Ingredients
- 3/4 cup mashed banana
- 4 egg whites or 2 extra large eggs
- 1/3 cup canola oil
- 1/2 cup unsweetened pineapple juice concentrate or apple juice concentrate, thawed
- 1 T. plus 1 tsp. water
- 1 cup all-purpose white flour
- 1 cup whole wheat flour
- 3/4 tsp cinnamon
- 1/3 cup chopped walnuts, optional
- 2 tsp baking soda
Preheat the oven to 350 degrees.
In a large bowl combine the bananas, eggs, oil, juice concentrate and water, stirring by hand till well combined. Add the flour, cinnamon and nuts. Mix again by hand till combined, approximately 1-2 minutes. Stir in baking soda and mix approximately 30 seconds. Pour into baking dish immediately and place into oven.**
Bake for 18-20 minutes until knife inserted in center comes out clean. Cool on wire rack.
**Do not allow batter, pans or muffins to sit between mixing and placing in oven. The fruit juices and soda together will within minutes deactivate the rising process.
Keep some of these on-hand in the refrigerator or freezer for a quick and easy breakfast treat that actually is quite good for your new diabetic health.
