Best Recipe For Salsa

This recipe for salsa is one of my favorites for many reasons. It is easy to make and takes no time at all to put together. It doesn't cost very much at all and I usually have most ingredients on hand. When planning for a party you can make it a day or two in advance and it is actually better to do so. Just don't make it too far in advance or the temptation to eat it all before your get-together is too great!

Ingredients:
2 Large Cans Diced Tomatoes
2 Long Hot Peppers
2 Cloves Garlic
1/2 Onion (White, Yellow, Red, or any combo)
1/2 Bunch Cilantro
Lime Juice
Black Pepper

Preparation:
Char the skin of peppers by holding it over a flame on the stove. You will hear popping sounds and the skin will turn black. Once the entire pepper is black, place in Ziploc bag for a few minutes. The bag will steam up and make it easier for the skin to come off. Once cooled, rinse the pepper in the sink. This will make it easy to remove the skin. Split the pepper to remove the seeds (unless you like it very spicy in which case you can leave some or all of the seeds). In a food processor, blend all ingredients and mix together in a medium to large bowl. Add lime juice and black pepper to taste. Allow salsa to sit refrigerated for at least one hour prior to serving to allow all flavors to come together.

Notes:
You can choose different peppers if you like milder or spicier flavors. I find the long hot peppers to have a great flavor with just enough kick for most people.

You can easily cut the recipe size down by half for a simple dinner or double or even triple the recipe for a large group.

I typically blend all ingredients until smooth but you can make it as chunky as you like.

To jazz up the recipe even more you can add black beans and corn. Add a few tablespoons of this salsa to diced mango, papaya, and pineapple for a sweet and spicy fruit salsa. Even better you can make a large batch and then jazz portions of it and have three separate salsas. Most people will think you made them separately and spent a ton of time in the kitchen! Experiment with other flavors too and the possibilities are endless.

Enjoy!
