A Carb Is Just a Carb, Right?

There are some die-hard Atkins and Protein Power Plan addicts out there that honestly believe that carbs in any form are bad if eaten while on their weight loss plan.  Nothing could be further from the truth. 

There is one grain that is so healthy and nutritious and would only benefit from your efforts with weight loss but because it's considered a "carb", the "carbless" people won't touch it.  I'd say they missing out big time.

What is it you ask?  It's called Quinoa!

There's only one problem with quinoa and that is how to pronounce it.  Its origins rise from South America and the way it's pronounced there is KEEN-wah.

You could call quinoa a super grain but in actuality, it is not even a true grain.  It's actually a seed from a leafy plant that is distantly related to spinach. It's high in protein which includes the amino acid lysine which makes this protein complete.  Quinoa offers more iron than other grains and contains high levels of potassium and riboflavin, as well as other B vitamins: B6, niacin, and thiamin. It is also a great source of magnesium, zinc, copper, and manganese, and has some folate (folic acid).  Don't you think that including this ingredient into your diet could be beneficial for you?  I certainly do.  Give it a try.

Here's how I like it:

Warm and Nutty Cinnamon Quinoa(serves 4)

1 cup coconut milk

1 cup water

1 cup organic quinoa, (rinse thoroughly before cooking)

2 cups fresh blueberries or rasberries

1/2 teaspoon ground cinnamon

1/3 cup chopped pecans or walnuts

Combine milk, water and quinoa in a medium saucepan. Let it come to a boil over high heat. Reduce heat at medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blueberries and cinnamon (you can also add a little stevia to sweeten); transfer to four bowls and top with pecans or walnuts.
