For a long time, processed soups were becoming so popular in the supermarkets, it was easy to forget how quick and effortless it could be to make soup at home.  But thankfully, more and more people are re-discovering the wonders of homemade soup. So if you are thinking about making some vegetable soups, here are my Top 5 vegetarian soups to try.  

1.  Roast Butternut Squash Soup

A real winter warmer, this soup is gently spiced and packed with flavour. Cut your squash into large chunks. There's no need to peel.  Toss in a roasting tray or pan with a little olive oil, ginger and chilli. Season with salt and pepper and cook in the oven for about half an hour or until the squash is nice and soft.  Transfer to a food processor and blend with some hot stock or water for a beautiful and tasty soup.

2. Chili Bean Soup

This recipe is so fast and so good. It uses a clever shortcut that really works - a can of store-bought chilli beans! These are cooked up with onions, garlic, chilli and tomatoes and finished with sour cream.  This makes such a tasty and easy soup, it's even better with some guacamole on top.

3. Potato And Parmesan Soup

A delicious cheesy potato soup with parmesan.  This is quick to make, comforting and is a perfect winter meal. Creamy and delicious, this is one you have to try.

4. Hearty Lentil Soup

This one tastes great and is perfect if you are watching your weight.  Chunky vegetables and green lentils are cooked with tomatoes and lots of herbs and garlic.  This is a super satisfying soup, packed with nutrients and low in calories and fat. 

5. Carrot And Coriander Soup

Carrot and coriander soup is a classic.  It's flavoured with ground coriander as well as plenty of fresh coriander (cilantro) herb.  Easy and healthy. The perfect soup and one that's popular with even the fussiest of eaters.
